Growing Season
- The mild winter allowed the vines to remain in good shape throughout the cold months.
- In May, one to two weeks before bloom, temperatures spiked to 100 degrees for about a week.
- The heat spike led to a smaller canopy which allowed for more light penetration, and contributed to good flavor development in the fruit. The hot temperatures also contributed to smaller berries with concentrated flavors.
- During fruit set the weather conditions were favorable and the summer saw mild to average temperatures.
- Veraison started 10 days ahead of average.
- At the beginning of harvest, temperatures were moderate, and October weather was ideal for harvest.
Vineyards
- Coyote Canyon Vineyard lies in the heart of the Horse Heaven Hills. Due to its diverse topography, this site is capable of producing everything from an elegant Riesling to a powerful Cabernet Sauvignon.
- The Viognier block from which the fruit was sourced is planted in low fertility soil and trained on a bi-lateral cordon system with sprawling canes.
- The vines are planted in north and south row orientations. Judicious use of drip irrigation and shoot thinning allow the fruit beneficial exposure to sunlight.
- Warm daytime temperatures and low humidity contribute to flavor and promote the natural accumulation of sugars without the influence of Botrytis.
Vinification
- Wonderfully ripe, clean fruit was rushed to the winery and quickly, but gently, pressed.
- The juice cold settled for 48 hours.
- The clean juice was then racked off solids and allowed to warm before inoculated to initiate fermentation in temperature controlled, stainless steel tanks.
- A long, cool fermentation contributed to both fruity and floral aromas. Fermentation was arrested when the perfect balance of flavor, sugar, acid and alcohol was achieved.
